This is a recipe that was tested with wild mushrooms. The wooded and almondy taste of forest-harveste mushrooms gives a special touch to the recipe, but all types of mushrooms can be used.
About 20 grams of dried mushrooms ( eg mixing steak http://epices-en-folie.com/upload/categorie-canada/champignons/mélange-champignons-steak
or any other type of fungi.
1 teaspoon steak spice tea (see recipe spice blend steak below)
1 teaspoon s . ½ flour
1 teaspoon s . ½ butter
1 tbsp t . salt
200 ml beef broth
200 ml of quench water mushroom or mushrooms juice
Mixture preparation steak spice
2 c . tablespoon of black peppercorns
1 Chinese star anise ( star anise )
1 c . tablespoon coriander seeds
1 c . tablespoon mustard seeds
1 c . tablespoon salt
1 c . tablespoon celery salt
1 c . tablespoons dried onion flakes
1 c . tablespoon garlic powder
1/4 c. teaspoon cayenne pepper
Preferably , grill the three types of grains (pepper, coriander and mustard ) and star anise in a pan to get the flavors . Grinding in a mill or with a mortar and mix with remaining ingredients .
Use the technique to rehydrate the dried mushrooms : Wash the mushrooms in cold water . Place mushrooms in a bowl and cover with warm water for 20 minutes. Drain and add to the recipe. Retain and filter water for soaking soups and sauces.
Cook mushrooms rehydrated in a pan with butter. Do not forget to keep the soaking water for the sauce.
Preparing the sauce
In fact , it is to prepare a traditional red sauce, but with a half beef and half preparing mushroom juice .
Mix 200 ml of mushroom juice with 200 ml of beef .
In a skillet, melt the butter with the flour over medium high heat . Mixing to obtain a paste. Y slowly add the liquid half broth / half water mushroom , e up the sauce thickens. Add the steak spices and cooked mushrooms . Simmer over low heat for a few minutes.

Cook ground beef meatballs in a pan or on the BBQ. When the meatballs are cooked, top with the sauce and serve with french fries or mashed potatoes and vegetables.
