Salmon tartare


A few slices of smoked salmon or smoked tuna

400 grams of fresh salmon

Mix 1 1/2 tablespoon of mayonnaise with one teaspoon (or more) garlic pesto

1 small french leek

1 tablespoon capers

1 tablespoon chopped chives

A few drops of tabasco sauce and lemon juice

Sea salt or Guérande salt and pepper



Mix everything together and rectify the seasoning. Serve with pepper kettle chips and sea salt, grilled bread croutons and green salad (homemade sauce: nut oil and guérande salt)
